Keto (Cornmeal) Porridge





Okay warm cereal lovers... this one is for you. One of my personal warm cereal recipes is cornmeal porridge. This West Indian dish is a staple in Jamaica. The sugar content is much higher in the traditional recipe , therefore it is NOT keto- friendly. However, with the cold temps outside - your girl had to do some experimenting in the lab ( my kitchen lol). I loved the way it turned out and I am so happy to be able to share it with you.

1/3 cup of ground almonds

1/2 cup of coconut milk

1 teaspoon of cinnamon

1 teaspoon of vanilla extract

1 pinch of salt

1 teaspoon of sweetener ( optional)


Add 1/2 cup of water to pot ,then add 1 tablespoon of grass-fed butter- on medium heat. Once water starts to boil, add almond flour to water and stir. After that, add 1/2 cup of coconut milk. Once the flour has a porridge consistency, add in the cinnamon, vanilla extract, and sweetener if desired.





Enjoy with alone or with toppings. I enjoyed this with some berries and chia seed sprinkled on to for more texture.
