Easy Keto | Low-carb cookie recipe You Must Try

Ingredients:

4 tablespoons of melted peanut butter

3 squares of dark cocoa ( I used baker's chocolate)

2 eggs

1 tablespoon of your favorite sweetener



make sure the peanut butter has cooled a bit before adding the eggs. Then mix the four ingredients together. Next, form the mixture into balls, and place on parchment paper.( about 2-3 inches apart). Then take a fork and flatten the balls into a regular cookie shape. Bake at 350 degrees for 8 minutes.


This recipe makes about 10 cookies, which is perfect for meal prep or for when you are just chilling on the weekends with the family watching t.v. Once you make this recipe your own, you can then play round with other ingredients like nuts, chocolate morsels, coconut, etc. Just watch the sugar content.



These chocolate chip cookies are simply delicious and easy-to-make. By now, if you follow me on Instagram- you know that i looooooove cookies, so I'm always looking for new ways to have my cookies and stay on track with my fitness goals.


I know what is like to want cookies, without all of the sugar or preservatives they use to maintain the freshness of the product. I'm not knocking those products, but I prefer fresh ingredients and smaller batches- so I don't eat the whole sleeve in one sitting ( one of my hidden talents). If you like a little something sweet without going off plan.- this recipe is perfect for you.



Soften one cup of peanut butter in a mixing bowl, by placing in microwave for a few seconds( I did 45 seconds).




Throw in a handful ( about 1 tablespoon)of walnuts. I chopped up these pieces to ensure consistent texture within the cookie. Then add 1 tablespoon of chocolate chip morsels (dark or semi-sweet). Set this aside and add 1 large egg into the peanut butter- make sure it has cooled off if you placed it in the microwave.





Then add all ingredients together and mix well until you mixture has a cookie dough consistency. Then take your teaspoon and form the dough into a ball like the pic below. Then Place ball on a non-greased cookie sheet and flatten into a cookie shape.









Now this is totally up to you, but I placed a few chips on top -so I get more chocolaty goodness ( don't judge me...lol). After you place cookies on the pan. Bake in the oven( I use my toaster oven) for 7 minutes.


Ready- to - eat in minutes


These cookies are so easy-to make. They also store well in the fridge ( for when you are practicing mindfulness lol).
