Lentils and pumpkin are two of my staples during this time of the year. Pumpkin is loaded with vitamins like Vitamin A, which is great for the health of your eyes. Pumpkin is also a very good source of fiber. Lentils are also a great source of fiber and protein. If you want to feel more satisfied after eating, try combining protein and fiber together in your meals. This recipe is super simple to make and is very satisfying; perfect for a weeknight meal.
