This recipe is super simple and only take a few minutes to make...( insert happy dance here lol). All you need are a few ingredients like shrimp, zucchini, mini bell peppers, onions, olive oil and spices like Turmeric, Chipotle chili pepper) Garlic powder and coarse Black pepper.
Cut up 1/4 cup of yellow onions
3 mini bell peppers
1 cup of Zucchini
Season your shrimp with garlic powder, turmeric, Chipotle chili pepper, coarse black pepper. I did not use any salt in this recipe.
Add olive oil to your pan and allow the peppers and onions to sweat, like they were doing a nice little cardio sculpt class. Then add your zucchini.
Then add your shrimp
Let shrimp cook for just a few minutes before turning, then cover.
After about 3 minutes after covering, remove cover,and this is what you get.
